Chef Chadi Massoud spent more than three decades as a corporate chef — a career built on precision, volume, and other people’s menus. Bayte Bites is what happened when he started cooking from memory instead: a kitchen in Lebanon, garlic and lemon, shawarma turning slow on the spit, and a table where nobody eats alone.
So everything here is made the way it was made at home. The shawarma marinates overnight, because that’s how long it takes. The falafel is fried to order. The hummus is blended fresh that morning. Thirty years of discipline, aimed squarely at the food he grew up on.
